INGREDIENTS:
8 medium kiwi fruit, peeled and divided
3/4 C sugar
3/4 C lemon juice
1 liter carbonated water
DIRECTIONS:
1. Slice two kiwi into small pieces. Place in ice cube trays and fill with water. Freeze.
2. Cut remaining kiwi into fourths; place in a food processor. Cover and process until smooth. Strain and discard pulp. In a 2 quart pitcher, stir the sugar and lemon juice until sugar is dissolved. Stir in the kiwi puree. Refrigerate until chilled. Just before serving, stir in the carbonated water. Serve lemonade over kiwi ice cubes.
