A great way to incorporate some "green" into your diet!!
INGREDIENTS:
4 chicken breast halves, skinless and boneless
1 pkg mostaccioli, uncooked
3 clove garlic, minced
2 Tbsp olive oil, extra virgin
1 bag fresh spinach
4 oz cream cheese
1 C cottage cheese
1/2 C parmesan cheese
2 C mozzarella cheese
DIRECTIONS:
1. Cook noodles according to package directions.
2. Cut chicken in small pieces. Stir fry in olive oil and minced garlic till no longer pink.
3. Add bag of spinach. Allow spinach to wilt.
4. Add in cream cheese, cottage cheese, Parmesan cheese, and salt and pepper to season.
5. When noodles are done, drain. Toss meat mixture in with noodles. Pour in 9x 13in baking dish and top with mozzarella cheese. Bake at 375 degrees for 25 minutes or until cheese is melted and browned a bit on top.
