BLT MUFFINS

Everything you want for breakfast in a handy little muffin!

INGREDIENTS:
2 C flour
1 Tbl baking powder
1 Tbl sugar
1 C milk
1/2 C mayonnaise
3/4 C crumbled cooked bacon (about 12 strips)
1/2 C chopped tomatoes
2 Tbl minced parsley

DIRECTIONS:
1. In a large bowl, combine the flour, baking powder and sugar. In a small bowl, whisk milk and mayo until smooth. Stir into the dry ingredients just until moistened. Fold in the bacon, tomatoes, and parsley.
2. Fill greased or paper lined muffin cups 2/3 full. Bake at 400 degrees for 20 to 25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool completely.
