BUTTER BALLS (JustAPinch.com)

INGREDIENTS:
1 C butter, softened
1/4 C confectioner's sugar
1 pkg (3.4 oz) instant lemon pudding mix
2 Tbl water
1 tsp vanilla extract (or almond)
2 C flour
1 C pecans, chopped (or walnuts)
2 pkg toffee bars (heath bars), chopped, to 1.4 oz

DIRECTIONS:
1.  With mixer cream butter and sugar until light and fluffy. Beat in pudding mix, water and vanilla. Remove from mixer stand and stir in nuts and chopped candy pieces. Roll by hand into approximately one inch balls. Place 2 inches apart on ungreased baking sheets. Bake at 325 for 12 to 15 minutes or until lightly browned. Cool 3 to 4 minutes and remove to wire rack to finish cooling. When completely cool sprinkle with confectioners sugar (optional). Makes about 5 dozen.
 
NOTE: Substitute toffee candy bars for purchased toffee pieces, mini chocolate chips, chopped fresh fruit such as apples, blueberries and cherries, chopped dried fruit such as peaches and apricots, etc. Use your imagination! If using fruit add some cinnamon.
