BEST SCRAMBLED EGGS (JustAPinch.com)

Hmmmm . . . never thought I needed a recipe for scrambled eggs, but I might just have to try this one!

INGREDIENTS:
4 Large eggs
1/4 C water
salt and pepper to taste
1 tsp olive oil
2 tsp butter

DIRECTIONS:
1.  Briskly beat the eggs, salt, pepper, and water together with a fork or wire whisk (about one minute).
2.  Put oil in skillet to coat the pan well.  Add butter.  Heat the skillet, when butter is melted, use spatula to spread it around the skillet.  Add the eggs.
3.  Cook the eggs over medium heat.  Gently push and turn over the eggs as they solidify.  Do not overcook or brown.
