SWEDISH BUTTER COOKIES


Okay - after whining and begging for 30 minutes tonight, my two year old got his way and we made yet another batch of cookies. We used this Swedish Butter Cookie recipe. Although it says "Grand Prize Winner" I can't say it's the best cook...ie I've ever eaten. They are alright. The maple syrup gives them a nice rich flavor, but I actually prefer the texture and flavor of the shortbread cookies we've made in the past. But, it was something different . . . so it was worth it!
 
INGREDIENTS:
1 C butter, softened
1 C sugar
2 tsp maple syrup
2 C flour
1 tsp baking soda
confectioners sugar

Directions:
1. In a large bowl, cream butter and sugar until light and fluffy. Add syrup. Combine flour and bading soda; gradually add to creamed mixture and mix well.
2. Divide the dough into eight portions. Rolle each portion into a 9 inch log. Place 3 inches apart on ungreased baking sheets.
3. Bake at 300 degrees for 25 minutes or until lightly browned. Cut into 1 inch slices. Remove to wire racks. Dust with confectioners sugar
