INGREDIENTS:
3-1/4 to 3-1/2 C flour
3/4 tsp salt
6 eggs, beaten
DIRECTIONS:
1. In a small bowl, combine 3-1/4 C flour and salt. Making a well in the center, pour in the eggs. Stir together, forming a dough. Turn onto a foured surface. Knead for 3 to 4 minutes or until smooth. Add remaining flour as necessary.
2. Divide the dough into nine portions; cover and let rest for 15 minutes. Roll each portion of dough into a 12 x 5 inch rectangle. Roll up jelly roll style, starting with a short side; cut into 1/4 inch thick strips. Unroll noodles and allow them to dry on kitchen towels for at least one hour before cooking.
When cooking the noodles, we like to boil them for 9 to 12 minutes in chicken broth . Once they are tender, we add cooked, shredded chicken. It's delicious! If you need to thicken the broth, feel free to add some flour by mixing a few Tbl of flour into some cold water and then slowly stirring it into the broth.
*Hint - when you are cutting the noodles, I leave the rectangles unrolled and then use a pizza cutter to slice out the noodles.
