HOMEMADE BUTTER

We do this at preschool with the kids using baby food jars to "shake" the cream.  When it's done, we add a pinch of salt and they they spread it on crackers.!  It is one of their favorite things to make.  I have cheated when making it at home by whipping it with my hand mixer until the butter separates in the bowl!

INGREDIENTS:

cold heavy cream (about 36% butterfat)

DIRECTIONS:
1.  Use a mason jar. Fill half way with cream, for room to shake. Shake for 15 to 20 minutes until milk and butter separate.  Strain liquid, retaining the more solid butter.
2.  If you like to make flavored butter, you may add roasted garlic, basil, dried tomato, etc.
3.  Store in refrigerator.
